Mixed Sorbets on Sweet Ginger Fried Wontons


We all love fried foods and well sugar is always fabulous too! I instantly knew these dessert wontons would not disappoint! Since there was only five of us for dinner (and very few sorbet flavor selections at the grocery store I opted for the raspberry and mango that Pam suggest). I gave each guest one of each with a generous sprinkling of chopped pistachios. Although the wonton were fried this was a very refreshing dessert! *I cooked the wontons and sugared them prior to my guest arriving along with chopped up the pistachios. I left them off to the side, and after dinner prior to doing the dishes I took the sorbet out. These were very easy to assemble and on the table in know time! 
Prep: 10 minutes
Serves: 8

Ingredients: 
  • 2 cups vegetable or canola oil
  • 1/2 cup sugar
  • 1 tbsp ground ginger
  • 16 wonton wrappers (from a 12 oz refrigerated package)
  • 3 pints sorbet (coconut, mango, raspberry)
  • 1/3 cup coarsely chopped toasted pistachios
Directions: 
1. Heat oil in a medium skillet over medium heat until a small cube of bread sizzles when dropped in the hot oil. While oil heats, mix sugar and ginger in a shallow bowl, and, for easy cleanup, set a wire rack over newspaper. 
2. Working with 4 at a time, drop wonton wrappers into hot oil (I could only do 2 at a time). Fry, turning once, until crisp and golden brown, 1 to 2 minutes. Set on wire rack. As soon as you are able to handle, place each wonton in sugar mixture and coat generously on both sides. Return to wire rack. Repeat with remaining 12 wontons. 
3. Using a 1 tablespoon ice cream scoop, form 8 generous sorbet balls from each flavor and place on a rimmed backing sheet. Cover if preparing more than  few hours ahead and return to the freezer (or forgo this step if you are going to assemble right then and there--just make sure you get your sorbet out a few minutes prior so that it will be easier to scoop)! 
4. Just before serving, place 2 wonton nests, overlapping them slightly, on each dessert plate. Arrange sorbets over wontons. Sprinkle with pistachios and serve!
