Monday Features {on Tuesday}

Thank you to everyone who linked up. I attempted to crawl out of bed yesterday, but this flu/infection has gotten the best of me. As some of you know I was in Dallas, Texas last week for work and unfortunately half way into my trip got sick. Of course the flight home was no fun, and all I was craving the whole time I was there was soup... chicken broth, chicken soup, any soup for that matter! I'm finally feeling much better today; however, I have to take it easy since I'm still pretty weak.

Love to have Mexican night once a week at our house. I've never made an enchilada casserole but have always wanted too! I will definitely be making this sometime soon. And, let's talk about these churros. Honestly, I had no idea how easy these were. I own a deep fryer... look out. Next taco night; churros are being made!
